Easter Dinner for One

I’ve gotten used to being on my own for Easter, since I’ve been away from home at school for a total of six years now. This year I finally decided I’d had enough, and I planned to make myself a solo version of the Page family Easter dinner. The traditional version includes a lamb roast, potatoes, some steamed veg, a dinner roll of sorts, and of course, a wide variety of mint sauces and jellies. We prefer to follow the Scottish style Easter dinner to the American version of a ham dinner.

This year while perusing the Safeway meat section, I spotted a small portion of a rack of lamb and thought it would be perfect. Because I don’t have a grill, I’ve started trying to perfect the sear-roast with my cast iron pans. I started with a coating of chopped garlic, rosemary, grainy moustard, some olive oil, salt and pepper.

The trick is to give one side of the meat a good sear in the pan on the stovetop until it starts to brown, then flip over, cover with tin foil, and pop in a hot 400 degree oven for another 5-10 minutes to finish the roasting.

I also saw some moustard greens in Safeway, and figured I might try to use them as a side. I sauteed them with more chopped garlic, a bit of grainy moustard, and a dash of balsamic vinegar. They really turned out nicely, and I’d definitely eat it again instead of Kale (in the words of Jim Gaffigan, we all need to quit eating Kale. It tastes like bug spray.).

Since I wasn’t vibing any other veg, and didn’t feel like eating bread with my meal, I opted for some simple cooked quinoa with some melted butter on top. All in all, a pretty decent way to spend Easter on my own, and a nice way to get a taste of home.
