Fellow Fancy Frite, Felix Chen, made these little treats a few months ago and I thought they would be perfect for my cocktail party so I thought I’d try ’em out for myself.
My ability to bake is non-existent and should probably never be attempted so I try to avoid it at all costs. Cream cheese stuffed strawberries. Voila! An easy bake-free dessert that looks fancy and tastes delicious. Makes about 30.
Ingredients:
2 lbs fresh strawberries (about 30)
250g light or regular cream cheese at room temp.
3 Tblsp powdered sugar
1 tsp pure vanilla extract
Graham cracker crumbs for dusting. About 1/4 cup.
Step 1:
Thoroughly wash the strawberries and using a paring knife cut down into the strawberry and around the leaves and stem to remove the stem while hollowing out the strawberry slightly.
Step 2:
In a bowl combine the cream cheese, powdered sugar, and vanilla. Mix until combined. Spoon the mixture into a piping bag fitted with a medium tip.
Step 3:
Pipe the cream cheese filling into each strawberry finished with a swirl of cream cheese on the top. Sprinkle with graham cracker crumbs. That’s it!
Variations:
- Try using chocolate cream cheese for something a little more decadent. Philadelphia makes a chocolate cream cheese that’s the best thing since Nutella.
- Try mixing the regular cream cheese with some strawberry jam for added colour and flavour.
- Add extra graham crumbs inside the strawberry before piping in the cream cheese.
- Also thought it would be cute to fit your piping bag with a ‘leaf’ tip and finish off the tops with cream cheese leaves to mimic the leaves and stem of the strawberry.
