Anyone who knows their way around Seattle knows that Beecher’s is THE spot in Pike Market for cheese. You can’t make a trip to the market without stopping by the window, watching as the machines hypnotically churn, making those tasty cheese curds everyone loves.
What you might not know is that Beecher’s is also the spot for some crazy good mac and cheese, and fellow blogger Janine will tell you this is the best of the best. Of course I disagree, but I’ll never accept that anything is better than my own recipe, whether that’s even true or not.
On my most recent visit, we decided to split a large “World’s Best Mac and Cheese”, because obviously why would we try anything else? Made with their Flagship cheese, a semi-hard cow’s milk cheese with robust flavour that comes from 15 months of aging, this mac and cheese is anything but run-of-the-mill. We also got an Artisan Breadzel, less pretzel than breadstick, but it was definitely good to have with the mac and cheese.
The mac and cheese itself has a nice sharp flavour from the aged cheese, and a really good consistency (not grainy like some). The noodles were also cooked perfectly el dente, not something you expect for a meal that’s produced for the masses every day. The Breadzel was a nice savory addition, with cheese and herbs baked into the twisty bits. What pairs well with carbs? More carbs, of course.
If you’re down in the Pike Market, definitely stop in Beecher’s for some lunch. The seating is limited to say the least, with only one crammed bar to sit at, but most people just take their order outside and sit on a patch of sidewalk. But, the service is friendly, the mac and cheese delicious, and why shouldn’t you also pick up a block of Flagship (or even better, the Smoked Flagship) to snack on at home later?

I bought the take home mac and cheese kit from them once. It also included jack cheese along with the flagship. I followed the recipe and it didn’t turn out at all. I’m sure it’s intentional so u have to go their store to get the real deal. Love Beecher’s.
