This recipe was a big hit. The bacon bits add great texture to the guac and the feta adds a tanginess to the mix.
Bacon: We used Red Barn bacon for this recipe but I think we would have preferred a bacon that crisps a little better and is more savory like Glenwood’s regular bacon.
Makes 3 cups
Ingredients
1/2 cup diced rendered bacon
1 large tomato, with seeds removed and diced
4 ripe avocados
juice of 1 lime
1 yellow onion finely diced
1 tbls vinegar
1/2 cup feta (I recommend a goat or sheep feta as the taste is so much more intense and amazing) cut into cubes
1/4 cup chopped cilantro
1 jalapeno diced (optional)
Salt and pepper to taste
Method
Put the diced onion in a bowl and add a few tablespoons of vinegar and a few tablespoons of water and set aside.
Cut the avocadoes in half and remove the pit and scoop out the avocado into a large bowl and mash using a fork or potato masher.
Drain the diced onion and add to the mashed avocado along with the remaining ingredients. Add more salt, pepper or lime juice if necessary.
