Seasoned Bacon

The other day my friend Will mentioned something about cinnamon on bacon. Everything before and after that statement was a blur. Whaaaa? Cinnamon and bacon?!

He went on to tell me that cinnamon and sugar on bacon is an amazing flavour combination. Of course I didn’t believe him so there was only one thing to do….

This evolved into a great bacon seasoning experimentation. We tried different spices to jazz up bacon. Some worked better than others, but overall it’s a great way to make regular bacon a little more exciting than it already is.

We took four rashers of regular thick cut grocery store bacon and laid them out on a baking sheet. The first strip we sprinkled lightly with cinnamon and sugar on both sides. On the next strip we sprinkled with Old Bay seasoning. On the third strip some garlic salt. Then on the last strip some maple syrup. Be sure not to over season the bacon. For something like this a little seasoning goes a really long way.

We baked the bacon in the oven on high for about 10mins. Checking on it frequently as bacon done in the over can burn quite quickly. Once the bacon was slightly crisp along the edges it was ready.

The cinnamon and sugar was actually pretty tasty. The cinnamon added a slight spice and complexity to the bacon. I don’t think this bacon would go well with eggs in the morning but I do think it would go great with pancakes!

The Old Bay wasn’t my favorite. It added an overwhelming herbaceous flavour to the bacon. Maybe next time I’ll put even less so make the flavouring more subtle.

The garlic salt was also just alright. Even though the garlic flavour made for a delicious savoury bacon strip the salt in the seasoning was too overpowering.

Lastly the maple bacon. The maple formed a gooey glaze on the bacon and the flavour was just amazing. The sweetness complimented the saltiness of the bacon beautifully without having too much of an overpowering flavour. I know it’s not like we found something new here, maple bacon has been around for ages, but still it was fun to make our own.
